I love cooking with produce that is in season; it’s cheaper, the ingredient is readily available, and there is something comforting to the mind and body to follow the seasons in the living of our daily lives. My family loves cucumbers; a readily available summer ingredient and our local farmers’ market is bursting with them. Here is a super easy summer cucumber dish that is the perfect complement to most summer fare.
What you need:
Easy Summer Cucumbers
6 English Cucumbers, peeled and sliced.
1 small red onion cut in small pieces or thin slices
1/2 cup chopped parsley (curly, not flatleaf)
1 cup rice wine vinegar
1/2 cup sugar
**less sugar modification: To make this usimg less sugar, cut BOTH the rice wine vinegar and sugar amounts by one half.
Toss all ingredients in a large bowl. Enjoy right away or keep in refrigerator.
